I realize I'm opening the door for all sorts of remarks, but what's a "power pole"?

Without jumping at the possibilities, guessing that the power pole is the device seen in the first picture of the boat. Thinking it maybe anchors the boat in shallow waters???

It says 12" draft. Keep in mind that is floating draft, not runnning draft.

I agree with SeaVet. That design is not a flats boat. Better description would be inshore CC.

How much water to take off/hole shot and then run in?

Well the usual flats boats keep their holeshot draft down with a high power-to-weight ratio and a nearly flat bottom at the transom. Hard to be sure from the photos, but my guess is that this hull design has some V to it.

I have also seen some that have a sort of aft tunnel to feed water to a high mounted prop/engine to reduce the getting-on-plane draft.

Boats shaped like that take off in very little water.
